Pepper, the king of spices, traces back its origin to India and Sri Lanka. It is believed that the Venerable Bede, the English Monk distributed a handful of pepper while in deathbed as his personal wealth. Pepper is unique in the spice world as the pepper is marketed in four different varieties - white, green, red and black peppercorns.

Black pepper is more aromatic than the other varieties of pepper. It is native to Malabar and has been grown here for more than 2000 years. The best Black Pepper is considered to be of Telicherry and Lampong varieties. The most popular varieties from India, Malabar Garbled and Tellicherry Black pepper, still dominates in production and consumption.

It is one of the best -valued all over the world and a symbol of fine cookery. It is widely used in all cuisines of the world. It appears in several well-known spice-mixtures; alone or in combination with other spices. Black Pepper is best when ground is fresh.

In Holland, nutmeg is used for just about everything, literally from soup to nuts, and also for pastries, Ice creams as toppings. The “four spices'' constitutes nutmeg, ginger, white pepper and cloves. Allspice and cinnamon are sometimes added. Four spice mix finds its way into stews, ragouts, sausages and pastries.

Both nutmeg and mace possess aromatic stimulating properties, and are occasionally used to remove flatulency, correct the nausea arising from other drugs, and to allay nausea and vomiting. It may be used in gastrodynia and atonic diarrhoea. The nutmeg forms a very agreeable addition to various drinks for convalescents, as well as to some articles of diet; it is generally grated over them, or mixed with them. Nutmeg as a rule is added to sweet dishes such as rice pudding or egg custard and can be added to spice up a hot drink. Nutmeg was just about monopolized by the Dutch East India Company because of it's high value in the 17th and 18th centuries, and a Roman emperor once fumigated the streets of Rome before arrival.
